Spring G-and-Tetley Tea

Warmer days are en route and that means lots of time for sundowners!
My favourite drink these days is gin and tonic so I decided to see if I could put my own twist on this by making my own infusion using Tetley’s new Lemon tea – and produced the most awesome result!

Did a bit of research online first and adapted a recipe from The Kitchy Kitchen – so here is mine:

FOR THE INFUSION YOU NEED:
– 2 cups gin – I used Bombay Original as I wanted something that has no detectable infusion in it and this is a great, reasonably priced dry gin.
– 2 tablespoons Tetley Lemon Tea leaves – open the bags and use the dry leaves.
– A jar with a tight lid – I used a Consol pickling jar.

TO SERVE:
1/2 cup lemon juice – I added this as wanted it to have a definite lemony taste.
2 tablespoons simple syrup (you make this by boiling 1 cup of white sugar with 1 cup of water until the sugar has dissolved).
4 cups ginger ale – I used Schweppes.

METHOD:
Add the 2 cups of gin to the jar, then add the dry tea leaves and seal for at least a week – the longer you leave it, the stronger the tea flavour will be – I left mine for 2 weeks.
When you’re ready to use it, use a fine sieve to strain the tea leaves from the gin and pour into a bottle – unless you’re going to make a big jug immediately, in which case – party time!

When ready to serve, combine the gin infusion, lemon juice, simple syrup and lots of ice in a jug and stir, then add the ginger ale and stir gently – it fizzes if you go too crazy.
Serve immediately – this should make 6 drinks.

This is flipping delicious so I need to say it – please drink responsibly!

Below are some pics of the process – make sure to use a fine sieve otherwise you’ll have lots of bits in your drink!
